A street stall on Triệu Việt Vương in Đà Lạt: one charcoal grill, one rice-paper sheet, eggs cracked onto it, scallions, dried shrimp, your choice of cheese, beef or sausage. Grilled until the edges curl, cut in four, eaten hot. Mật has been doing it the same way since the city started getting cold at night.
